Our Story
InSo was born from a vision to create a dining experience unlike any other – one that goes beyond exceptional food to take guests on a journey through atmosphere, design, and discovery. At its core is a live-fire kitchen where open flame, bold flavors, and global influences come together to create a distinctive expression of Modern Texan cusine. Each dish is thoughtfully crafted, layered with intention, and designed to leave a lasting impression.But the experience doesn’t stop at the plate. General Manager
Greg Minella brings a globally inspired, detail-driven approach to hospitality at InSo, shaped by years living in Turkey, his Italian heritage, and early exposure to the food world through his family’s roots in New York’s historic Fulton Fish Market.
His career spans acclaimed fine-dining destinations and private clubs, including Gershwin’s, Star Canyon, Aurora, Dragonfly at Hotel ZaZa, and Carte Blanche—where he helped earn the only Five-Star Forbes rating awarded to a freestanding restaurant in Texas. WSET Level II–certified, Greg curates boutique, small-batch wines and always encouraging guests to taste with an open mind

Trisha Prellwitz
Trisha brings over 15 years of hospitality leadership, specializing in opening new restaurant concepts, launching hotel venues, and sustaining operational excellence beyond opening day. Her leadership style is hands-on and people-first, grounded in precision, culture, and accountability.
At InSo, Trisha oversees daily operations, team development, and brand standards, ensuring every guest experience is seamless, elevated, and consistent—because every detail matters and every moment counts.

Christian Baird
Christian brings over 20 years of experience shaping Dallas’s nightlife and live music scene. A former owner of iconic venues including Oscar’s Bar & Grill and The Green Room in Deep Ellum, he understands nightlife from both the operational and cultural sides.
A longtime musician and former guitarist with DFW bands LOWSIDE and The Joey C. Jones Band, Christian has a deep connection to the local entertainment community. Known for his instinctive grasp of crowd dynamics and extensive network, he sets the tone on the floor each night—ensuring every InSo experience feels intentional, energetic, and unforgettable.

John rose
Beverage Director
John Rose brings over 14 years of experience with Wolfgang Puck and premier live music venues, specializing in elevated cocktail and spirits programming. Known for building high-performing service teams, his approach emphasizes quality, consistency, and exceptional guest experience.
Blending a respect for classic technique with a discerning eye for contemporary trends, John creates beverage programs that strengthen brand identity, showcase creative flavor profiles, and deliver memorable moments at InSo.
The Artists Behind the Plate

Michael Morabito
Executive Chef Michael brings decades of culinary leadership to InSo, shaped by experience in some of the country’s most respected kitchens. Raised in hospitality under the mentorship of his father, a renowned hotel chef, Michael refined his craft at Caesars Palace’s Palace Court in Las Vegas, rising to Saucier under Chef Arnauld Briand.
He later spent 12 years at The Mansion on Turtle Creek alongside Dean Fearing and went on to serve as Executive Chef at Colonial Country Club. At InSo, Michael’s cuisine blends Southeast Asian flavors with bold Texas influences, delivering refined, expressive dishes rooted in precision, creativity, and storytelling.

Robert Pineda
Robert brings over 25 years of hands-on culinary experience to InSo, with a career rooted in classic technique and refined through premier steakhouse concepts including Hofbrau SteakHouse, Ruth’s Chris Steak House, and Eddie V’s Prime. Known for his award-winning butchering skills and meticulous attention to detail, his approach emphasizes precision, consistency, and respect for the product.
With a cross-fusion style that blends technique, culture, and creativity, Robert’s leadership adds structure, elevated presentation, and consistency to every service. His experience and passion help set the standard of excellence in the InSo kitchen.
